Superfood Toasties

With all the exotic foods around today we seem to have forgotten about the humble toasty.  This one is a really yummy healthy treat and it hits all the right food groups. It's high in very good fats, high in fibre.  It's really a superfood sarnie!

 

If you've got an old-fashioned electric toasty machine then you're onto a winner, but if not you can just grill this in a hot pan or in the oven It's simple tasty and very nutritious.

Ingredients

2 slices of good quality bread - I saw a great ancient grain loaf the other day, beautiful!
Organic Roma Cherry Tomatoes, sliced

olive oil, to drizzle

1 tspn Chia Seeds

30g Feta, crumbled

1/2 Avocado, mashed

6 Black Olives, pipped and chopped

Oregano, preferably fresh

Pinch Cayenne Pepper

Overnight Oats

Zucchini Frittata

Choc Almond Smoothie

Prep

Layer tomatoes, a drizzle of olive oil, chia seeds, the avocado, feta cheese, olives and a sprinkle of oregano and cayenne pepper. Place other slice on top and toast in toasty oven.  You can do this as an open toasty if you like - just divide ingredients and layer on both slices of bread and place under grill to toast.

 

Enjoy as a snack or you can add a salad for a light meal.
