Sleep Better Recipes
Here are two recipes (one vegetarian, one with salmon) to help you get a good night’s sleep. It incorporates foods that have been shown to contain compounds that may help you sleep better.
Spinach, Almonds and and Egg or Salmon with Couscous
1/4 cup of almonds (roughly crushed)
1 large hard boiled free range egg (remove from shell and quarter)
3 cups of baby spinach leaves (washed)
1/2 a cup of chick peas (cooked)
1 small banana sliced
1 cup Cous Cous (1 cup serves approx. 4 people)
Virgin olive oil
Vegetable stock (approx. 500ml)
Ground fennel seeds
¼ cup Greek Yoghurt
½ lemon, juiced (for Salmon version)

Make up your couscous as directed on the packet but use a vegetable stock instead of water (keep back approx. ¼ cup stock for use later). When Cous Cous has absorbed the liquid as per directions on pack fluff it up with a fork and mix up any lumps, then empty into a medium sized pan with a drizzle of virgin olive oil. Add a little more stock (about a 1/4 of a cup) then mix in the almonds, cooked chickpeas, a pinch of cumin, ground fennel seeds, sea salt and a couple of grinds of black pepper. Place spinach leaves on top and leave on a low heat with lid on for about 5 to 7 minutes on a low heat or until spinach leaves have wilted and the Cous Cous is fluffy. Mix all the ingredients in the pan arrange hard boiled eggs on top and drizzle with some Greek yogurt and sliced banana. Serve straight away.
Above recipe but with the addition of Atlantic Salmon
Simply make the vegetarian version as above BUT add extra 1/4 a cup of stock. Place the Salmon fillets (which you have seasoned with sea salt and pepper and rubbed with some olive oil) on top of the spinach leaves, add the lemon juice and the zest of the lemon. Then cook for 7 to 10 minutes on a low heat until the Salmon is just cooked and Cous Cous is fluffy. Leave off the heat with lid on for 2 to 3 minutes then serve with a drizzle of Greek yoghurt and sliced banana (optional). It’s up to you if you want to add the hard boiled eggs (again optional).
