Greek Salad

A Greek salad is a great and healthy way to add more nutrition to your salad by adding key vitamins and minerals plus essential fats.

Ingredients

1 medium cucumber

½ a bunch of mixed coriander, mint and dill

½ cup almonds

12 black Kalamata olives

12 small ripe tomatoes

1 iceberg lettuce

2 tablespoons virgin olive oil

½ lemon, juiced

Sea salt

Ground black pepper

1 red onion (peeled)

100g low fat Feta

Prep

Chop cucumber and onion (peeled).  Cut in half tomatoes.  De-pip olives and crush a little (squeeze down onto a board with your hand).  Chop up or better still tear up the iceberg lettuce. Chop coriander, mint and dill.  Place in a bowl and add almonds, olive oil, lemon juice, salt and black pepper (to taste).  Mix well, serve and enjoy!
