Curried Pumpkin, Sweet Potato and Carrot Soup

This soup is not only great on cold winter days, but also for reduing inflammation in your body.  The combination of Sweet Potato and turmeric is a powerful, natural anti-inflammatory.  Plus you also the added health benefits of carrots and pumpkin - the both enhance the immune system and protect against cell damage. 


1 tbspn olive oil

1 onion, finely chopped

3 garlic cloves, finely chopped

1 litre vegetable stock

1 tspn curry powder

1 tspn turmeric

1 tspn garam masala

1 cup coconut milk

1 small sweet potato, peeled and cubed

2 medium sized carrots, sliced

½ small butternut pumpkin, peeled and chopped

2 small red chillies, finely chopped (optional)

2 Tbsp coriander, roughly chopped

Heat oil in large saucepan, add onion and garlic, and spices  cook for 3 – 4 minutes, stirring occasionally until onions are soft.  Add vegetables, cook for approximately 8 – 10 minutes on a low heat.  Add stock, bring to the boil, then reduce heat and simmer for approximately 20 minutes.  Remove from heat, puree to the thickness you like, return to low heat, add light coconut milk and heat until hot. Season to taste, add a sprinkle of coriander and serve.
