Broccoli Fritters

Broccoli is what you call a super vegetable!  The health benefits of broccoli have been widely touted, particularly in regard to its potentially protective qualities against cancer.  An easy and highly nutritious recipe that you can have for lunch or dinner.

Ingredients

500 grams fresh broccoli, chopped medium fine

½ teaspoon sea salt

8 spring onions, chopped finely

125 grams feta cheese, crumbled

½ cup fresh broad leaf parsley

¼ cup chopped fresh mint

2 eggs beaten

½ cup plain wholemeal/spelt or other flour of your choice

Freshly ground black pepper to taste

2 Tbsp Olive oil or Olive oil spray

Prep

Put the broccoli, spring onion, feta, parsley, mint eggs, in a bowl a combine mixing together all ingredients, then stir in flour, salt & pepper.

 

Heat the olive oil in a non-stick pan over a medium to high heat.  Place in pan enough broccoli, mix to form a good-sized fritter (about a tablespoon of the mixture). Flatten down in the pan with the back of the spoon and cook until golden (about 2 minutes either side).  Use the Olive oil spray if you need between each fritter.  Serve with yoghurt sauce and a mixed salad.

 

Yoghurt Sauce

1 garlic clove, finely minced

1 Tablespoon extra virgin olive oil

125 grams of plain yoghurt

2 tablespoons lemon juice

Pinch of sea salt

Freshly ground black pepper

Put all ingredients in a bowl and combine by stirring together. Serve with Broccoli Fritters.
