Blueberry Pancakes​
Ingredients
  1. 1 scoop Healthy Weight (your choice of flavour)

  2. 3 egg whites

  3. ½ cup flour of your choice
    (rye, spelt, wholemeal, etc or even roughly chopped oats)

  4. 1 cup milk

  5. 1 cup blueberries

  6. 1 tsp baking powder

  7. Olive Oil spray

  8. Cinnamon (for topping)

  9. Maple syrup or honey (for topping)

  10. Greek yoghurt (for topping)​

 

 

 

Blend egg whites and milk.  Add the Healthy Weight, oatmeal and/or flour, baking powder.   Blend until smooth consistency.  Try mixing in one of our Premium Blender Shakers – quick, easy and lump free!  Carefully add in 1/2 the blueberries. 

 

Lightly spray olive oil in a skillet, griddle, or frying pan and place over medium heat.  When the pan is fully heated Scoop approx 2 tbsp of batter in fry pan (this is one pancake).

 

Cook until bubbles form in the batter and then flip the pancake.   Continue to cook until lightly browned on both sizes.  (To keep warm place the pancakes on a tray with a baking sheet in the oven - at approx 100 degree C ).  Repeat with the remaining batter. 

 

To serve the pancakes, place desired pancakes on a plate, add remainder of blueberries, Greek yogurt, drizzle of maple syrup or honey and a sprinkle of cinnamon.
