Phil's Oatmeal Slices

Ingredients
1 egg
2 egg whites
½ cup Melrose concentrated apple juice
½ cup almonds
½ cup sultanas (sulphur free)
1 tsp millet
1 tsp sunflower seeds
1 tsp flaxseed oil
3 cups rolled oats
½ cup plain yoghurt
Olive oil spray
Pinch cinnamon (optional)

Method

Combine yoghurt, egg, egg whites and apple juice concentrate in a large bowl. Mix well. Add all other ingredients and combine into a dough like consistency, (you may need to add a little more yoghurt).

Pour mixture into a shallow non-stick baking tin and smooth into one level (approx 2 - 3cm thick). Spray with a little olive oil (and cinnamon - optional) and bake in a medium oven (200 °C) until golden brown.

Remove and put onto cutting board. Carefully cut into equal bars (fingers) and put back into baking tray to bake underside for approx 10min (or until brown).

Remove and allow to cool on wire rack.
